A barbecue without sauce is like Thanksgiving without the turkey, or Christmas without presents! If you are bored of the "simple" there are many different ways to add unique flavours and transform a staple sauce into something amazing.

Fruit can transform a barbecue sauce into something tangy and original. There are various fruits that go especially well with the basic barbecue sauce ingredients, but you can always experiment to find new concoctions. For starters, try our lemon sauce recipe. For this, you will need butter, flour, garlic, lemon juice and tobasco sauce (if you like a kick!). Melt the butter and fry the garlic, then add the flour to make a paste. Add the rest of the ingredients and stir.

Other fruits we have used with great success include apricots and plums. Finely chop the fruit, and add it to ingredients such as fried onion or garlic, as well as mustard. Adding lemon juice together with these fruits heightens the zesty flavour too. Pineapple makes a fabulous glaze for meat, especially pork.

You will need to combine pineapple juice, mustard, brown sugar and cloves in a pan over a medium heat. Then simply brush the glaze over the meat when it is around ten minutes from being ready to serve.

For a surprising ingredient for barbecue sauce, we have tried using various beverages. Coca-cola (or Pepsi) have a high sugar content and this helps the sauce to caramelise, turning the food a lovely golden colour. Just add a can of the cola to the classic barbecue sauce ingredients (ketchup, onion and vinegar).

You can use alcoholic drinks to enhance the flavour of your sauce too. To keep with the relaxed atmosphere of a barbecue, try using beer to baste the meat prior to cooking. The alcoholic content tends to cook off, leaving a sweet, rich aroma and taste. Similarly, whiskey makes for a fantastic base for a barbecue sauce. Around three-quarters of a cup of whiskey should be sufficient when added to vinegar, ketchup, garlic, onion and brown sugar.

Asian cuisine has become mainstream, and it is now being incorporated into the barbecue menu too. The spicy flavours and unusual ingredients can really make your barbecue sauce into something special. Try hoisin or teriyaki sauce, adding them to equal parts ketchup and shop-bought barbecue sauce. Five-spice powder makes an authentic Asian flavour, but only add it in small quantities. Experiment with chilli, kaffir lime leaves and coriander for a Thai influence.
